Ingredients
- 1/4 cup milk
- 0.7 oz instant coffee
- 4.4 oz dark chocolate
- 2 3/4 cups all-purpose flour
- 3 tsps baking powder
- 1/2 tsp salt
- 7 oz butter (soft)
- 1 cup sugar
- 4 eggs (at room temperature)
- 5.3 oz heavy cream
- 1.2 oz butter
- 3/4 cup powdered sugar
- 2 tbsps unsweetened cocoa powder
- 3 tbsps espresso
Steps
To prepare the coffee bundt cake, heat the milk, add the instant coffee, stir to dissolve, and set aside.
Coarsely chop the dark chocolate and set aside.
Mix the flour with the baking powder and salt and set aside.
Preheat the oven to 350°F (static) and butter and flour the bundt pan.
Beat the soft butter together with the sugar until frothy. Add the eggs, one at a time, waiting for the previous one to be absorbed before adding the next egg.
Sift half of the flour and baking powder mixture into the butter and egg mixture and mix briefly with beaters. Add the remaining flour mixture, the coffee dissolved in milk, and the heavy cream and mix everything with beaters just until you obtain a homogeneous mixture, with no visible flour traces.
Incorporate the chopped dark chocolate and transfer the batter to the bundt pan.
Bake at 350°F for about 45 minutes. Do the toothpick test.
Remove the coffee bundt cake from the oven, let it cool slightly, then remove it from the pan.
Then prepare the glaze: melt the butter in a small bowl. Add the powdered sugar, unsweetened cocoa powder, and espresso. Mix everything well until you get a smooth glaze. Pour the glaze over the bundt cake and let it cool.
Serve your coffee bundt cake sliced.
