Cream of Button Mushrooms

The cream of button mushrooms is a light and fragrant dish, with all the aroma of fresh button mushrooms, also known as meadow mushrooms. Enriched with some roasted bread cubes or served with some croutons, it is perfect as a light dinner. Preparing it is very easy, starting with the classic sauté of onion and garlic in this case, then adding the sliced mushrooms and finishing with vegetable broth, after deglazing with white wine.

Ingredients

  • 14 oz button mushrooms
  • 2.1 oz onion
  • 1 clove garlic
  • 4 tbsp vegetable oil
  • to taste nutmeg
  • 0.7 oz all-purpose flour
  • 2 fl oz white wine
  • 3.2 cups vegetable broth (hot)
  • 1 sprig thyme
  • to taste salt
  • to taste pepper
  • 4.2 oz heavy cream

Steps

  • To prepare the cream of button mushrooms, clean the button mushrooms by removing all the soil and slice them thinly. Set aside.

    Peel and chop the onion and garlic.

  • Heat the oil in a pot and add the onion and garlic to sauté. Then add the button mushrooms and sauté for about 5 minutes, stirring occasionally. When the mushrooms are well browned, take some out and set them aside for when you serve the cream.

    To the mushrooms in the pot, add the grated nutmeg, sauté for another minute, and add the flour while stirring. Continue cooking, stirring for another minute, and deglaze with white wine. Stir immediately and let it evaporate. Then add the hot broth and the sprig of thyme, salt, and pepper. Bring to a boil while stirring, lower the heat, and continue cooking with the lid on, for about 15 minutes.

  • Adjust the seasoning with salt and pepper and blend everything with an immersion blender until you achieve a creamy consistency. Add the cream, blend again, bring to a boil, and immediately serve your cream of button mushrooms, garnished with the mushrooms set aside.

Suggestions

You can also serve your cream with some croutons.

If you don’t have thyme, the cream is also excellent with rosemary.
