Homemade Rub for Marinating Meat

A homemade rub for marinating meat has the advantage of being customizable to your taste. Preparing it is obviously very easy, just mix various spices and store it in a glass jar, to always have it on hand.

Different meats require different spices and thus different rubs. This rub, for example, is very suitable for seasoning red meats. I prepared it with a base of paprika, both sweet and hot, for its delicate aroma, but especially for its color. A few teaspoons of brown sugar, not so much, or rather, not only for its sweetness, but to achieve a caramelized effect that will help make the surface crispy. I then added garlic and onion powder, as well as dried rosemary and thyme, to give a Mediterranean touch. I didn’t add salt because I used Bauer instant beef broth, which, in addition to salt, also contains other dehydrated vegetables, such as potato, onion, carrot, parsley, garlic, and celery.

Packaged in a nice jar, this rub is also a great gift idea to bring as a token for an invitation, for example.

Ingredients

  • 2 teaspoons sweet paprika
  • 1 teaspoon hot paprika
  • 3 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons pepper (ground)
  • 3 teaspoons brown sugar
  • 6 teaspoons instant beef broth (Bauer)
  • 1 teaspoon rosemary (dried)
  • 2 teaspoons thyme (dried)

Steps

  • To prepare the rub for marinating meat, put the sweet paprika, hot paprika, onion, and garlic powder into a small bowl and mix. Add the ground pepper, sugar, and instant broth, dried rosemary, and thyme and mix everything well again. Transfer your rub into an airtight glass jar.

  • To marinate the meat, place it on a plate or tray and sprinkle it with the rub as desired, massaging it lightly. Then wrap the meat with plastic wrap and let it marinate for at least 3 hours, or even overnight if desired. Proceed with grilling, pan-frying, or as indicated in your recipe.
