The marbled cinnamon yogurt cake is a dessert to be baked in a baking pan or casserole dish. It’s made with a simple whisked batter enriched with plain yogurt and, once spread in the pan, is topped with a mixture of melted butter, sugar and cinnamon that creates a delicious, flavorful crust in the oven.

Ingredients
- 6 tbsp butter
- 1/2 cup sugar
- 2 1/2 tbsp flour
- 1 tbsp cinnamon (heaping)
- 2 3/4 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 4 eggs (at room temperature)
- 2/3 cup sugar
- 1 tbsp vanilla sugar
- 2/3 cup vegetable oil
- 7 oz plain yogurt
- 3.5 oz powdered sugar
- as needed milk
Steps
To prepare the marbled cinnamon yogurt cake, first make the cinnamon swirl. Melt the butter in a small saucepan, heating it just enough to melt it without making it too hot. Add the sugar and cinnamon and stir. Finally add the flour, mix well and set aside.
Preheat the oven to 356°F (conventional) and line a baking pan or casserole (approx. 10 x 10 in) with parchment paper.
Then proceed to prepare the batter itself.
Mix the flour with the baking powder and salt and set aside.
In a bowl, beat the eggs with the sugar and vanilla sugar until pale and frothy. Slowly stream in the oil while continuing to beat. Finally add the yogurt and mix just to incorporate it; then add the flour mixture and beat with the mixers at low speed just until no dry flour streaks remain.
Transfer the batter to the pan and spread evenly. Spoon the cinnamon swirl over the surface in dollops. Use a skewer or the handle of a fork to create a marbled effect on the surface, making random circular and zig-zag motions.
Bake the cake at 356°F for about 30 minutes. Do the toothpick test.
Remove from the oven and let cool.
Meanwhile, mix the powdered sugar with a little boiling-hot milk, just enough to obtain a fairly thick glaze.
Decorate your marbled cinnamon yogurt cake with the glaze and serve cut into squares.
