Matcha latte, my daughter’s new favorite drink after she tried it in Normandy. And honestly, I don’t dislike it either, so I thought of making this matcha cake. What base could I have chosen if not the hot milk cake base? Very easy to make, super soft and perfect for both breakfast and as an afternoon snack.
For those who are not familiar with matcha, it is a variety of Japanese tea with a bright green color, and it is the tea with the highest percentage of antioxidants; it is also rich in vitamins, minerals and polyphenols.

Ingredients
- 1 1/3 cups flour
- 1 tsp baking powder
- 2 pinches salt
- 1/2 cup milk
- 5 tsp matcha powder
- 4 1/2 tbsp butter
- 4 eggs
- 2/3 cups sugar
- 1 1/2 tbsp vanilla sugar
- 1 lemon (grated zest)
- to taste powdered sugar
- to taste matcha powder
Steps
To prepare the matcha cake, mix the flour with the baking powder and salt and set aside.
Put the matcha powder in a small bowl.
Bring the milk to a boil and add 3 tablespoons of it to the bowl with the matcha. Whisk with a matcha whisk so that the powder dissolves.
To the remaining milk add the butter and bring back to a boil.
Preheat the oven to 338°F and line the bottom of an 8–8.7 inch (20–22 cm) cake pan with parchment paper.
Put the eggs in a bowl with the sugar, the vanilla sugar and the grated zest of the previously washed lemon and whisk until you obtain a pale, very frothy mixture.
Sift the flour, baking powder and salt mixture over the egg mixture and fold in with a spatula using upward motions.On the side of the bowl, pour in the matcha dissolved in the milk and the other milk with the melted butter and fold in with upward motions.
Transfer the batter to the pan lined with parchment paper and bake at 338°F for about 30 minutes. Do the toothpick test.
Remove from the oven and let cool on a wire rack.
Serve your matcha cake dusted with powdered sugar and a pinch of matcha powder.
