Ingredients
- 1 small eggplant
- 1 zucchini
- 1/2 red bell pepper
- 2 cloves garlic
- 4 tablespoons extra virgin olive oil
- 4 sprigs rosemary
- to taste salt
- to taste pepper
- 4 slices grilling cheese
- 15 cherry tomatoes
- to taste basil
Steps
To prepare the Mediterranean oven-baked melty cheese, preheat the oven to 392 degrees Fahrenheit (fan) and line a baking sheet with parchment paper.
Wash and clean the eggplant, zucchini, and bell pepper and dice them. Put the vegetables in a bowl. Peel the garlic and chop it finely. Add it to the vegetables along with the extra virgin olive oil, rosemary, and a pinch of salt and pepper. Mix everything well.
Spread the vegetables on the baking sheet and bake for about 12 minutes, stirring halfway through.
Then remove the baking sheet from the oven, move the vegetables to one side, and place the 4 slices of cheese on the parchment paper. Cover the cheese with the vegetables and bake everything again for about 8-10 minutes.
Meanwhile, wash the cherry tomatoes and cut them in half.
Remove the cheese from the oven, add the cherry tomatoes and some basil leaves, and serve your Mediterranean oven-baked melty cheese immediately.
