The microwave mug apple cake is the solution for those times when you crave something sweet but don’t have a cake at home. In fact, it takes just over 10 minutes, or maybe even less, to prepare and cook it. And then you can enjoy it immediately. You don’t have to wait for it to cool down; in fact, it’s even better warm! I think it’s also the perfect breakfast for Valentine’s Day, maybe served in bed with a bouquet of flowers… just an idea though.
I bet you don’t even need to go shopping to make this mug apple cake, because you surely have all the ingredients at home. We all have flour, milk, and sugar, right? And apples too! I used the Pinova variety from Mela Val Venosta, which is one of my favorites with its slightly tart flavor and firm, crunchy flesh. If you have another variety of apple at home, that’s fine too! If you’re missing cinnamon, no problem, you can also use some grated lemon zest to further flavor the batter.

Ingredients
- 1/3 cup flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 2 pinches salt
- 1 tablespoon brown sugar
- 1 teaspoon vanilla sugar
- 1/4 cup milk
- 1 tablespoon butter (melted)
- 1.8 oz Pinova apple (Mela Val Venosta)
- as needed powdered sugar
Steps
To prepare the microwave mug apple cake, in a microwave-safe mug (about 7 oz capacity), mix the flour, baking powder, cinnamon, and salt. Add the brown sugar and vanilla sugar. Pour in the milk and melted butter and mix well until you get a smooth batter without lumps.
Wash and peel the apple, remove the core, and dice 1.8 oz. Incorporate the apple cubes into the batter in the mug.
Cook everything in the microwave at 900 watts for 1 minute and 20 seconds. Check the doneness with a toothpick. Depending on your microwave, it might need a few more seconds. If your mug cake is not yet cooked, return it to the microwave in 5-second bursts, always at 900 watts. Serve the mug apple cake warm, dusted with powdered sugar.

For those with a sweet tooth, you can also add some pieces of white chocolate to the batter or serve the mug apple cake with whipped cream.
