Ingredients
- 400 g farfalle (or other pasta of your choice)
- 50 g onion (about 1/3 cup chopped (≈1.8 oz))
- 200 g smoked salmon
- 3 tablespoons extra virgin olive oil
- 50 ml white wine (about 3 tbsp + 1 tsp (50 ml))
- 250 g heavy cream (about 1 cup (250 ml))

- to taste black pepper
- to taste chives and parsley (optional)
Steps
To prepare the pasta with smoked salmon, bring plenty of water to a boil in a large pot, add salt and drop in the pasta.
Meanwhile, peel and finely chop the onion.
Cut the smoked salmon into strips and set aside.
Heat the oil in a skillet and lightly sauté the onion for about one minute. Then add the salmon and brown for a couple of minutes, stirring occasionally. Deglaze with the white wine and let it evaporate.
Pour in the cream, season with salt and pepper, stir and cook over very low heat until the pasta is ready.
Drain the pasta al dente, reserving a little of the cooking water. Put the pasta in the skillet with the sauce and toss, adding a bit of the reserved cooking water if needed to better combine everything.
Serve your pasta with smoked salmon sprinkled with chopped parsley or chives to taste.
