Pasta with Sun-Dried Tomatoes and Mascarpone

Pasta with sun-dried tomatoes and mascarpone is an excellent quick dinner solution that takes just over 10 minutes to prepare with a few ingredients you often have at home. You’ll need some sun-dried tomatoes in oil, a few cloves of garlic, grated Parmesan, and mascarpone. The sauce is prepared while the pasta cooks and can be further flavored with basil, oregano, or even chili pepper. The result is a creamy and flavorful pasta for the whole family. Very simple to prepare, without special ingredients.

Ingredients

  • 12 oz pasta (e.g., fusilli)
  • 4.4 oz sun-dried tomatoes in oil
  • 2 cloves garlic
  • 2 tbsp vegetable oil
  • 6 oz mascarpone
  • 2 tbsp grated Parmesan
  • to taste salt
  • to taste chili pepper

Steps

  • To prepare the pasta with sun-dried tomatoes and mascarpone, bring plenty of water to a boil in a large pot, salt it, and add the pasta.

  • Meanwhile, finely chop the sun-dried tomatoes in oil and set aside. Peel and chop the garlic. Heat a pan with oil (you can also use the oil from the sun-dried tomatoes if desired) and add the chopped garlic and sun-dried tomatoes. Sauté everything for a couple of minutes, stirring occasionally. Add the mascarpone and stir to melt it. Add the grated Parmesan and a ladle of pasta cooking water and mix. Adjust salt if needed.

  • Drain the pasta al dente, keeping some cooking water aside. Place the pasta directly in the pan with the sauce and mix. If needed, add a little more cooking water to combine and make the pasta even creamier.

    Serve your pasta with sun-dried tomatoes and mascarpone immediately, with some added chili pepper if desired.
