Crunchy bread shells filled with tartar sauce, lettuce, and slices of Speck Alto Adige PGI, are simply enjoyed by bites, without the need for cutlery, making them perfect as finger food or for a light and delicious summer dinner.

Ingredients
- 8 slices sandwich bread (square)
- 4 leaves lettuce
- 16 slices Speck Alto Adige PGI
- to taste extra virgin olive oil (for brushing)
- 2/3 cup mayonnaise
- 1/3 cup pickled cucumbers
- 1/3 cup pickled peppers
- 1 tbsp chives (chopped)
- 1 tbsp parsley (chopped)
Steps
To prepare the quick tacos with Speck Alto Adige PGI, preheat the oven to 375 degrees Fahrenheit (fan-assisted).
Place the slices of sandwich bread on a cutting board and with the help of a round cutter or a small bowl (about 5 inches in diameter) cut out a round disc from each.
Brush the bread discs with a little extra virgin olive oil, fold them in half, and place them on an upside-down muffin tray so they remain folded in half during baking.
Bake at 375 degrees Fahrenheit for 10-12 minutes until golden brown.
Remove from the oven and let cool for a few minutes.Meanwhile, wash and dry the lettuce and set aside.
When the bread shells for the tacos have cooled, fill them by spreading a teaspoon of tartar sauce inside, then add half a lettuce leaf and two slices of Speck Alto Adige PGI. Finish with a little more tartar sauce and serve.Drain the pickled cucumbers and peppers and chop finely. Put the mayonnaise in a small bowl, add the cucumbers, peppers, chives, and parsley, and mix. Store in the fridge until ready to use.
