Raspberry Puff Pastry Hearts

Sweet raspberry puff pastry hearts, filled with jam and finished with white chocolate and freeze-dried strawberries, for a delicious sweet-tart mix. Perfect for Valentine’s Day, Father’s Day, Mother’s Day, or whenever you want to surprise a loved one.

Raspberry puff pastry hearts are very easy to make and require only a few ingredients. If you prefer, instead of raspberry jam, you can use strawberry or cherry jam. To be honest, any jam is fine, although red jam is obviously more scenic.

Ingredients

  • 1 sheet puff pastry
  • 7 oz raspberry jam
  • to taste sugar
  • 3.5 oz white chocolate
  • 0.35 oz freeze-dried strawberries

Steps

  • To prepare the raspberry puff pastry hearts, take the puff pastry out of the fridge and let it sit at room temperature for a few minutes.

    Sprinkle some sugar on the work surface, unroll the puff pastry and place it on the sugar.

    Spread the jam over the entire surface of the pastry.
    Imagine a line in the middle of the pastry, then fold one short side over by a third towards the middle, then another third, to reach the center. Do the same with the other short side. Sprinkle the pastry with a little sugar, then fold it in half, so the two folded sides overlap. Place the pastry on a sheet of baking paper and refrigerate for 30 minutes.

  • Preheat the oven to 375 degrees Fahrenheit (fan).
    Take the pastry out of the fridge and cut it into slices about 0.6 inches thick. Place the slices on a baking tray lined with baking paper, with the cut side up.

    Sprinkle the surface with a little sugar and bake at 375 degrees for 20-22 minutes until golden.
    Remove from the oven and let cool.

  • Once the raspberry puff pastry hearts have cooled, chop the white chocolate and melt it in the microwave or in a bain-marie. Cover one side of each heart with the melted white chocolate and sprinkle with finely chopped freeze-dried strawberries.
