Roll Filled with Spiced Apples

The roll filled with apples is made with a soft sponge cake, enclosing a spiced filling of apples and whipped cream. A simple dessert with traditional flavors, featuring apples, in my case the Red Delicious apple from Val Venosta, which has a sweet and very aromatic taste, as well as a juicy and very pale flesh. It is available from September to July, so almost all year round, and is also available as an organic product!

Ingredients

  • 5 eggs
  • 125 g sugar
  • 1 tbsp vanilla sugar
  • 125 g flour
  • 1 tsp baking powder
  • 2 pinches salt
  • 3 Red Delicious apples (Apple Val Venosta)
  • 2 tbsp butter
  • 4 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 1/8 cups heavy cream
  • 1 tbsp powdered sugar
  • 1/2 tsp ground cinnamon
  • 1/2 cup heavy cream

Steps

  • To prepare the roll filled with spiced apples, preheat the oven to 428°F (static) and line a baking tray with parchment paper. Whisk the eggs together with the sugar and vanilla sugar until they become pale and frothy. Sift the flour, baking powder, and salt over the egg mixture and gently fold in with a spatula in upward movements. Pour the batter onto the parchment-lined tray, spread evenly, and bake at 428°F for about 6 minutes. Perform the toothpick test.

    Meanwhile, prepare a clean kitchen towel sprinkled with a bit of sugar. When the sponge cake is done, remove it from the oven and place it inverted on the sugar-sprinkled towel. Gently remove the parchment paper and roll the sponge cake, from the short side, inside the towel. Allow to cool completely.

  • Wash and peel the Red Delicious apples, remove the core, and cut them into cubes.

    Heat a pan with the butter and when it’s melted, add the apples and sauté for a couple of minutes over high heat, stirring occasionally. Add two tablespoons of sugar and let it caramelize, stirring. Finally, add the cinnamon and lemon juice, mix, and remove from heat. Allow to cool completely.

    Whip the cream with the remaining two tablespoons of sugar and refrigerate until use.

  • When both the sponge cake and the Red Delicious apple filling have cooled, you can proceed to fill the roll.

    Unroll the sponge cake and spread the cream over its entire surface, leaving about 3/4 inch free along the edge, towards which you will roll everything.

    On the opposite side, from which you will start rolling, spread the spiced apples, keeping about 2 tablespoons aside for decoration.

    Then roll the sponge cake starting from the side with the apple filling.

    Mix the powdered sugar with the cinnamon and sprinkle it over the entire roll.

    Place it on a tray.

    Whip the cream, transfer it to a piping bag, and decorate the surface of the roll as desired. Finish by placing mounds of spiced apples on the cream.

    Place your roll filled with spiced apples in the fridge for an hour before serving.
