Rye knots with onions and cheese are delightful buns to enjoy at any time, whether hot or cold. They are delicious as they are and do not need to be filled or further seasoned.
I often bake bread with various flours. In this case, I chose rustic rye flour from Molino Merano, which has a relatively light color with a slight husk content – thus a stronger taste. Additionally, rye flour is rich in fiber and is therefore a great ally for intestinal health.

Ingredients
- 4.2 oz onion
- 3.5 oz cheese (melty)
- 10.6 oz rye flour (Molino Merano)
- 7 oz spelt flour (Molino Merano)
- 1.4 oz dry sourdough with dry yeast (Molino Merano)
- 1.4 cups water (warm)
- 0.35 oz salt
- 1 tsp honey
- 4 tbsps extra virgin olive oil
- to taste sesame seeds
Steps
To prepare the rye knots, clean the onion and finely chop it. Heat a pan with 2-3 tablespoons of extra virgin olive oil and sauté the onion for a few minutes, stirring occasionally. Cut the cheese into cubes and set aside.
In a bowl, place the rye flour, spelt flour, and ADAM sourdough. Mix and pour in the warm water. Start kneading and add the salt and honey. Continue kneading by hand, also adding the extra virgin olive oil. Once you have a mostly homogeneous dough, add the sautéed onion and cheese cubes. Knead to distribute the cheese and onion in the dough, form a ball, return it to the bowl, and let it rise covered with plastic wrap in a warm place for about 1 hour and 15 minutes.
After the resting time, divide the dough into 24 equal pieces. Form a rope about 6 inches long with each piece of dough and then form the knot by tying a classic knot with the two ends of the rope. Place on a baking sheet lined with parchment paper. Once all the knots are prepared, cover them with plastic wrap and let them rise for another 45 minutes.
Before the end of the resting time, preheat the oven to 356°F (static).
Brush the knots with water, sprinkle with sesame seeds as desired, and bake at 356°F for about 20 minutes until golden brown. Bake one tray at a time.
Remove from the oven and enjoy hot or cold.
Suggestion
If there are leftovers, you can safely freeze them.
