Savory French toast is perfect for a light and tasty dinner and is ideal when you don’t feel like cooking much, as it is prepared in a flash without spending much time at the stove. I made a gluten-free version using Céréale’s fiber and protein sliced bread, which contains buckwheat whole flour and sourdough, and is rich in fiber. After soaking the bread slices in a milk and egg mixture and browning them in the pan, I served them with cherry tomatoes, fresh spinach, prosciutto, and buffalo mozzarella balls. A light and nutritious summer dish, which you can obviously customize with other toppings of your choice. These savory French toasts are also excellent with sautéed mushrooms or grilled vegetables for a vegetarian version.

Ingredients

  • 3 slices fiber and protein whole grain bread, gluten-free (Céréale)
  • 2 eggs
  • 1/4 cup milk
  • to taste salt
  • to taste pepper
  • to taste vegetable oil
  • 4 slices prosciutto
  • 16 cherry tomatoes
  • to taste baby spinach
  • 2 buffalo mozzarella

Steps

  • To prepare the French toast with Céréale’s fiber and protein whole grain bread, wash and dry the cherry tomatoes, and cut them in half. Wash the baby spinach and set aside to drain. Also, let the buffalo mozzarella balls drain.

  • Crack the eggs into a bowl, add the milk, salt, and pepper to taste, and beat everything with a fork until you obtain a homogeneous mixture.

    Cut the bread slices in half widthwise.

    Heat a pan, spreading a tablespoon of vegetable oil on the bottom.

    Pass the slices of bread, one at a time, through the egg and milk mix on both sides, let the excess liquid drain for a few seconds, and place the bread in the pan with the hot oil. Cook on both sides until golden, which will take a few minutes.

  • Stack three half slices of Céréale’s fiber and protein whole grain bread on a plate and top with cherry tomatoes, baby spinach, prosciutto, and a buffalo mozzarella ball.
