Savory Pepper Cookies

Savory pepper cookies are perfect to munch with an aperitif. Slightly spicy and still savory, also thanks to the addition of grated cheese in the dough, they are truly delicious and win everyone over.

They are very simple to prepare, in fact the dough is made in the mixer, but of course you can also knead by hand if you prefer, then form rolls and place them in the fridge. Finally, they are brushed with egg white and rolled in ground pepper, which gives them that delicious spicy crust on the outside.

You can also prepare these savory cookies in advance, as they keep for at least 10 days in an airtight container.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 teaspoon salt
  • 1/2 cup butter (cold)
  • 1 cup grated Parmesan cheese (or other aged cheese, grated)
  • 1/2 teaspoon pepper (freshly ground)
  • 1 egg yolk
  • as needed milk (cold)
  • 1 egg white (for brushing)
  • as needed mixed peppercorns (freshly ground)
  • as needed pink peppercorns
  • as needed fleur de sel (I used lava salt flakes (black salt))

Steps

  • To prepare the savory pepper cookies, put the flour, salt, cold butter in pieces, grated cheese, pepper, and egg yolk in the mixer. Turn on the mixer until you get a crumbly mixture.

    Transfer to the work surface and knead briefly, adding 1-2 tablespoons of milk, until you get a homogeneous dough.

    Divide the dough into 3 equal parts and form a log about 1 1/4 inches in diameter with each. Wrap in baking paper and place in the fridge for at least an hour.

  • After the resting time, prepare a sheet of baking paper sprinkled with ground mixed pepper. Add a few crushed pink peppercorns to give a touch of color.

    Preheat the oven to 350°F (convection).

  • Take the dough logs out of the fridge and brush them with egg white lightly beaten with a fork. Then roll them on the sheet of baking paper sprinkled with pepper, so that it sticks to their entire surface. Cut the dough logs into slices (approx. 1/4 inch) and place them on two baking trays lined with baking paper, with the cut side facing up. Brush the surface with egg white, sprinkle with a few pink peppercorns and a few salt flakes, and bake both trays at 350°F for approx. 10 minutes.

    The cookies should only be slightly golden on the surface.

    Take your savory pepper cookies out of the oven, let them cool completely, and serve with an aperitif or as a snack.
