Spaghetti with sausage and tomato is a hearty and flavorful first course, suitable for any season. After the gramigna with cream and sausage, I couldn’t leave you without the red variant of this very simple pasta sauce, but always appreciated.
Don’t worry, if you don’t have spaghetti at home, or if you don’t particularly like this shape of pasta (I don’t know why, but I know more than one person who tries to avoid them), you can easily use the sausage and tomato sauce to dress any short pasta shape.

Ingredients
- 1 onion
- 2 cloves garlic
- 3 tbsps vegetable oil
- to taste chili pepper (optional)
- 14 oz sausage
- 1/3 cup red wine
- 24.5 oz tomato puree
- to taste salt
- 14 oz spaghetti
Steps
To prepare the spaghetti with sausage and tomato, peel and finely chop the onion and garlic cloves. Heat a large pan with vegetable oil and gently fry the onion and garlic for a few minutes until softened, but not colored. If you decide to add chili pepper, you can do it now, either by adding a whole chili pepper in the onion and garlic sauté, or even some freshly ground chili, in which case add it towards the end of the sautéing to prevent it from burning.
In the meantime, peel the sausages and crumble them with your hands or coarsely chop them with a knife. Add the crumbled sausages to the onion and garlic and fry everything over high heat until the sausage is well browned. Deglaze with wine and let it evaporate.
Finally, pour in the tomato puree, bring to a boil and lower the heat. Let it cook over low heat with the lid on for about 20 minutes, or more if desired.
In the meantime, bring plenty of water to a boil in a large pot, salt it, and add the spaghetti.
When the spaghetti is al dente and the sauce is ready, drain the pasta, saving some cooking water, and add the spaghetti directly to the pan with the sauce. Mix well, adding a bit of cooking water to better combine everything.
Serve immediately your spaghetti with sausage and tomato.
