Speck Alto Adige PGI Tartare

The Speck Alto Adige PGI tartare can be served as an appetizer, or even as a fresh single dish, prepared at the last minute. In fact, it takes less than twenty minutes to prepare, then you let it rest for about ten minutes while you toast the slices of bread that will accompany it, and it’s ready to serve.

Ingredients

  • 5.6 oz Speck Alto Adige PGI (slices about 1/8 inch)
  • 4 fresh green onions
  • 1 apple
  • 2 tbsps chives (chopped)
  • 2 tbsps mustard
  • 2 tbsps lemon juice
  • 1/3 cup extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste walnut halves
  • to taste Speck Alto Adige PGI (slices)
  • to taste slices of bread (toasted)

Steps

  • To prepare the Speck Alto Adige PGI tartare, remove the rind from the Speck and cut the slices into cubes of about 1/8 inch. Place in a bowl.

    Wash the green onions and cut into thin slices, add to the Speck. Wash and dry the apple and cut into cubes of about 1/8 inch. Also add the apple cubes, along with the chives, and mix with the Speck and onions.

  • In a small bowl, mix the mustard, lemon juice, extra virgin olive oil, as well as salt and pepper to taste. Pour the dressing over the Speck and apple tartare and mix everything well. Let it rest for ten minutes and then serve your Speck Alto Adige PGI tartare garnished with some walnut halves and slices of Speck Alto Adige PGI, along with the toasted bread slices.
