Spiced Two-Tone Bundt Cake

The two-tone bundt cake is one of those desserts that feels like home and warms the heart. Whether enjoyed for breakfast or a snack, it wins everyone over with its simplicity.

In anticipation of Christmas, I prepared a spiced, super soft, and aromatic version. It is made like a classic two-tone bundt cake but with the addition of spices like cinnamon, nutmeg, cardamom, cloves, and ginger, or other powdered spices to taste, in the dark batter.

For the best result, it’s very important that all ingredients are at room temperature, especially eggs and butter. Everything else is a piece of cake.

Ingredients

  • 1 cup oz butter (at room temperature)
  • 1 cup oz sugar
  • 1 tbsp vanilla sugar
  • 4 eggs (at room temperature)
  • 2 cups oz all-purpose flour
  • 1/2 cup oz almonds (ground)
  • 1 packet baking powder
  • 2 pinches salt
  • 1 cup oz sour cream
  • 1/3 cup oz unsweetened cocoa powder
  • 3 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/3 tsp cardamom (ground)
  • 1/3 tsp ground ginger (optional)
  • 1/4 cup oz milk
  • as needed sweetened cocoa or powdered sugar (for dusting)

Steps

  • To prepare the spiced two-tone bundt cake, thoroughly butter and flour the bundt pan and set aside.

    Preheat the oven to 350 degrees Fahrenheit (static).

  • In a bowl, beat the butter together with the sugar and vanilla sugar until light and fluffy. Then add the eggs, one at a time, waiting for the previous one to be absorbed before adding the next.

    Mix the flour with the ground almonds, baking powder, and salt. Add to the butter and egg mixture and briefly work with the beaters. Then also add the sour cream and work everything until a homogeneous batter is obtained.

    Distribute half of the batter into the bundt pan.

    To the remaining batter, add the sifted unsweetened cocoa, all the spices, and the milk. Briefly mix to combine everything and distribute the spiced batter over the light batter. Then run a spoon in circular motions from top to bottom throughout the pan to create a marbled effect.

  • Bake the spiced two-tone bundt cake at 350 degrees Fahrenheit for about 55 minutes. Do the toothpick test.

    Remove from oven and let cool in the pan, then remove gently and let cool completely on a wire rack.

    Dust the two-tone bundt cake with sweetened cocoa or powdered sugar and serve.
