Strawberry and White Chocolate Tiramisu

The strawberry and white chocolate tiramisu is a fresh and delicious dessert, yet light, thanks to ricotta and plain yogurt, which are used to make the cream. Moreover, strawberries are perfect for those looking for lightness, but make sure they are quality strawberries that ripen on the plant, so they are nice red and sweet, like the mountain strawberries from Val Venosta that I used. The Val Venosta strawberries are available from mid-June to September, so for quite a long period. This is because they grow at different altitudes, therefore they also ripen at different times. A perfect seasonal fruit to prepare a great tiramisu… all summer long! Preparing it is really simple, even for those less experienced in the kitchen.

Ingredients

  • 3.5 oz white chocolate
  • 8.8 oz mascarpone
  • 8.8 oz ricotta
  • 1 cup plain yogurt
  • 6 tbsp sugar
  • 1 tsp lemon juice
  • 21.2 oz strawberries (Val Venosta)
  • 2 tbsp lemon juice
  • 5.3 oz butter cookies
  • to taste white chocolate shavings

Steps

  • To prepare the strawberry and white chocolate tiramisu, chop the white chocolate and set aside. In a bowl, work the mascarpone with the ricotta until creamy. Add the yogurt, sugar, and lemon juice and mix well. Incorporate the white chocolate and store the cream in the fridge.

  • Wash the strawberries and slice them. Set aside 450 g (15.9 oz) of sliced strawberries and blend the remaining ones with the lemon juice.

  • Spread 1-2 tablespoons of cream on the bottom of the dish, then make a layer with the butter cookies. Spread half of the blended strawberries on top, then spread half of the mascarpone and yogurt cream, and then make a layer with the sliced strawberries.

    Repeat the process by making another layer of cookies, distribute the remaining blended strawberries, then the remaining cream, and finally make another layer with the sliced strawberries. Finish by sprinkling the strawberry tiramisu with white chocolate shavings.

    Cover with plastic wrap and place in the fridge for at least 3 hours before serving.
