How I love summer fruit, it’s so colorful and tasty, and when combined in a beautiful fruit salad, it’s also a scenic dish to bring to the table. Let’s face it, good quality fruit is delicious on its own, without the need for many additions, but there are some ingredients that make it even more succulent and aromatic. For example, I like to dress peaches, blackberries, and raspberries with a mix of lemon juice, honey, and fresh mint… if you could smell the aroma.

A genuine and tasty end of meal or snack for everyone!

Summer Fruit Salad

Ingredients

  • 3 nectarine (approx. 1 lb)
  • 1 cup blackberries
  • 1 cup raspberries
  • 25 leaves mint (fresh)
  • 1 lemon (juice)
  • 1 tbsp honey

Steps

  • To prepare the summer fruit salad, wash and dry the nectarines. Place blackberries and raspberries in a sieve and rinse under cold water. Set aside to drain.

    Wash and dry the mint leaves.

  • Cut 15 mint leaves into strips and place them in a small bowl. Add the lemon juice and honey, and mix until the honey dissolves. Set aside.

    Cut the nectarines into four wedges, remove the pit, and then slice the wedges into slices about 1/8 inch thick. Put the nectarines in a bowl, add the well-drained blackberries and raspberries.

  • Pour the mix of honey, lemon juice, and mint over the fruit, stir and refrigerate for 30 minutes before serving, allowing the flavors to meld.

    Serve your summer fruit salad garnished with the remaining mint leaves.
