The tasty salad with crispy breadcrumbs and eggs is great both as a side dish and as a light main course. The special touch is the crunchy bread seasoned with paprika, which gives the recipe a really appetizing note; moreover, it can also be prepared in advance and is excellent for enriching many different salads.

It’s also a great way to reuse stale bread.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 3 oz panko (alternatively regular breadcrumbs — about 1 2/3 cups)
  • 1 tsp paprika
  • to taste salt
  • to taste pepper
  • 1 egg yolk
  • 2 tsp mustard
  • 3 anchovies in oil
  • 1/2 clove garlic
  • 4 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • to taste salt
  • to taste pepper
  • 2 hard-boiled eggs
  • 4 cups romaine lettuce

Steps

  • To prepare the tasty salad with crispy breadcrumbs, start by making the crispy breadcrumbs, which you can also prepare in advance and store in a glass jar.

    Heat a pan with the extra virgin olive oil, add the panko and toast while stirring; add the paprika, plus salt and pepper to taste, continue stirring and toast everything until it becomes crispy. It will take just a few minutes. Remove from the pan and set aside to cool.

  • Put the egg yolk in a tall container, add the mustard, anchovies, peeled garlic clove, lemon juice, plus salt and pepper to taste, and start blending with an immersion blender. When you have a smooth mixture, add the extra virgin olive oil in a slow, steady stream and work with the immersion blender until you obtain a homogeneous sauce. Then add water as needed to thin it out or to reach the desired consistency. Mix and set aside.

  • Wash the romaine lettuce and let it drain or pat dry with a clean kitchen towel.

    Peel the eggs and cut each one into four wedges.

    Arrange the lettuce on plates, add the egg wedges, dress with the crispy breadcrumbs and sauce as desired, and serve.
