The apple waffles are honeycomb-shaped waffles, soft inside and crispy outside, and delicious thanks to the grated apples in the batter. To prepare them in their classic form, you’ll obviously need a waffle iron. If you don’t have one, you can still opt to cook the batter by spoonfuls in a well-heated skillet, resulting in a sort of apple pancake.
I used the Royal Gala Val Venosta apple variety, which starts the apple harvest at the end of summer. It’s a crunchy apple with firm flesh, perfect for grating with a large-holed grater and adding to the batter.
Serve the waffles with a simple sprinkle of powdered sugar, or even with a mix of sugar and cinnamon, to make them even more delicious!

Ingredients
- 5 oz butter (at room temperature)
- 1/3 cup sugar
- 1 tbsp vanilla sugar
- 2 pinches salt
- 3 eggs (at room temperature)
- 1 3/4 cups flour
- 1 tsp baking powder
- 1 tsp lemon zest
- 2/3 cup milk (at room temperature)

Steps
To prepare the Gala Val Venosta apple waffles, place the butter in a bowl with the sugar, vanilla sugar, and salt. Beat together until fluffy. Add the egg yolks and set aside the egg whites. Continue beating. Sift in the flour with the baking powder and add it to the mixture, followed by the milk, briefly mixing the batter with the beaters between each addition.
Wash and peel the Gala Val Venosta apples and grate them with a large-holed grater. Add the grated apples to the batter along with the grated lemon zest, and fold in with a spatula.
Finally, whip the egg whites until stiff and fold them into the mixture with a spatula in upward motions.
Preheat the waffle iron, and once hot, add the batter, using about a generous spoonful per waffle. Cook for about 3 minutes, until golden. Remove the apple waffles from the iron and keep warm. Repeat the process until all the batter is used up.
Meanwhile, wash and slice the Gala apple for serving.
