Yogurt and oat pancakes are great allies for a nutritious and delicious breakfast, but not only that, they are also perfect for a snack or a quick sweet and nutritious break.

These pancakes are made with ground oat flakes, which give them an extraordinary taste and a unique softness.

Yogurt and Oat Protein Pancakes

Ingredients

  • 1 3/4 cups oat flakes
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 lemon (unwaxed)
  • 1 1/3 cups vanilla yogurt
  • 1/3 cup milk
  • 3 tablespoons melted butter
  • as needed vegetable oil (for the pan)
  • as needed strawberries
  • as needed blueberries
  • as needed maple syrup
  • as needed vanilla yogurt

Steps

  • To prepare the yogurt and oat pancakes, place the oat flakes in a blender and grind them into a powder. Put them in a bowl, add the baking powder and salt. Mix.

    In another bowl, lightly beat the egg with a fork. Add the grated zest of the previously washed lemon and the yogurt. Stir to obtain a homogeneous mixture. 

  • Pour the egg and yogurt mix into the oat flakes mix, briefly stir, then add the milk and melted butter, and stir just enough to get a homogeneous mixture, not too liquid.

    Heat a pan by spreading a little oil on the bottom and using an ice cream scoop or a spoon, place some batter in the hot pan. Depending on the size of the pan, you can obviously cook more pancakes at once. Cook on the first side until bubbles start to appear on the surface, about 2 minutes. At this point, flip the pancakes and let them brown on the other side as well.

  • Remove the pancakes from the pan, stack them, and keep them warm while you cook the remaining pancakes. 

    Serve your protein pancakes hot, accompanied with fresh fruit, maple syrup, and a few tablespoons of yogurt.

Suggestions

Generally, oat flakes absorb a lot of liquid, so if the remaining batter becomes too thick while cooking the pancakes, simply add a little more milk before cooking the next pancakes.

Of course, you can serve the protein pancakes with fresh fruit of your choice, depending on the season.
