Zucchini Pizzaiola Style

Zucchini pizzaiola style is a very simple and tasty side dish to prepare for any occasion. They are baked in the oven and the procedure is very simple.

You just have to cut the zucchini in half, season them with a drizzle of extra virgin olive oil and salt, and bake them. About halfway through cooking, add the tomato sauce, mozzarella, and oregano. If you like stronger flavors, you can also replace the mozzarella with a tasty melting cheese!

Ingredients

  • 3 zucchini (medium)
  • to taste extra virgin olive oil
  • to taste salt
  • 6 tablespoons tomato sauce
  • 4.4 oz mozzarella
  • to taste dried oregano
  • to taste basil

Steps

  • To prepare the zucchini pizzaiola style, preheat the oven to 392°F (fan mode) and prepare a large baking dish.

  • Wash the zucchini and cut them lengthwise. Place them in the baking dish with the cut side up. Drizzle with a little extra virgin olive oil and salt to taste. Bake at 392°F for about 15 minutes.

    Meanwhile, drain the mozzarella well and cut it into cubes.

  • After the first 15 minutes of baking, remove the zucchini from the oven and spread a tablespoon of tomato sauce, the mozzarella cubes, and oregano to taste on each. Bake for another 10 minutes or so, or until the zucchini are cooked to your liking, which may vary slightly depending on their size. To check if they’re done, try piercing them with a fork.

    Remove the zucchini pizzaiola style from the oven and serve immediately, garnished with a few fresh basil leaves.
