Agretti Frittata

A very tasty frittata.

As a main course, as an appetizer, as a second course… It is perfect for every occasion.

It looks really good, once cut into slices it becomes a pleasure for the eyes.

Agretti, also known as ‘monk’s beard’ or ‘monks’ mustard’, are small-sized plants typical of the spring season. They have purifying properties and are composed of: water (92%), fiber (2.5%), sugars (2.2%), proteins (1.8%), and finally fats (0.2%). In terms of minerals, agretti are rich in phosphorus, calcium, iron, magnesium, and potassium, while their vitamin content is ensured by the presence of vitamins A, B1, B2, B3, C, and K.

Ingredients

Let’s start preparing this super delicious frittata.

  • 4 eggs
  • 10.5 oz agretti, cooked, boiled
  • to taste salt
  • 4.2 oz cooked ham
  • 4 tbsps spreadable cheese

Steps

  • With a knife, cut the lower part of the roots of the agretti and remove it. Pour some water into a large bowl and add a tablespoon of baking soda, change the water several times until it is clean.

    Fill a pot with water and bring to a boil, add the agretti, add salt and cook for 5 minutes. Once cooked drain.

    In a bowl, beat the eggs with a pinch of salt and a tablespoon of grated cheese and the cooked agretti, mix well.

    Pour the mixture into a hot non-stick pan with some oil and cover with the lid. Cook for 3 minutes on each side.

  • Once cooked, place on a sheet of baking paper. While the frittata is still warm, spread the cheese and lay the ham on top, roll.

    Once rolled, wrap in plastic wrap and let cool at room temperature. If you’re not consuming it right away, put it in the fridge.

  • The frittata can be prepared in advance and sliced at the moment of serving.

Store the frittata for a maximum of 2 days in the fridge well covered with plastic wrap
