Agretti Omelette

The agretti omelette, also known as monk’s beard, is a nutritious and very tasty second course. It is prepared in no time, the only “effort” will be to clean the agretti well, but it will really take very little time, later I will explain how to proceed.

Here’s a curiosity: agretti are a valid help to increase the sense of satiety and facilitate intestinal transit, they can also be slightly laxative. The limited calorie intake makes it an ideal food for low-calorie diets.

Ingredients

  • 10.5 oz agretti, cooked, boiled
  • 4 Eggs
  • 1 tbsp Grated cheese
  • to taste extra virgin olive oil

Steps

  • With a knife, cut the lower part of the roots of the agretti and remove it. Pour water into a large bowl and add a tablespoon of baking soda, change the water several times until it is clean.

    Fill a pot with water and bring to a boil, add the agretti, add salt, and cook for 5 minutes. Once cooked, drain.

    In a bowl, beat the eggs with a pinch of salt, the tablespoon of grated cheese, and the cooked agretti, mix well.

    Pour the mixture into a hot non-stick pan with some oil and cover with a lid. Cook for 3 minutes on each side.

  • The Agretti Omelette is ready to be enjoyed.
