Ingredients for Air Fryer Cooked Zucchini

  • 2 zucchini
  • 2 tablespoons breadcrumbs
  • to taste salt
  • to taste extra virgin olive oil

Steps for Air Fryer Cooked Zucchini

  • Start by washing the zucchini thoroughly, trim them and cut them into small, regular pieces; this trick will allow for even breading on each cube. Place them in a large bowl, add the breadcrumbs and salt.

    Mix everything well, shaking the bowl or using your hands, so that the breadcrumbs adhere perfectly to the zucchini’s natural moisture.

    Once well breaded, place them in the air fryer basket, trying to distribute them evenly. Set the cooking at 392°F (200°C) for a total of 20 minutes. A crucial step for the success of the dish is halfway through: after the first 10 minutes, open the basket and stir the zucchini vigorously to allow the heat to brown them on all sides. Close the basket and continue cooking until they are crispy and golden on the surface.

Storage

Air fryer cooked zucchini are best eaten hot and freshly made to enjoy their crunchiness. If there are leftovers, you can store them in the refrigerator for 1-2 days in an airtight container. To make them tasty again, I recommend heating them for a couple of minutes in the air fryer or oven, so they regain their original texture without becoming soggy.
