All Apple Cake

Of all the apple cakes I have made, this is by far my favorite. Delicate, very soft and creamy thanks to the apples in the dough. I’ve made this cake gluten-free by using rice flour, but if you prefer, you can use all-purpose flour. A dessert that wins you over at the first bite, and it’s hard to stop eating it. The aroma will fill your kitchen with a scent of goodness and wholesomeness. Come with me and let’s start baking.

Ingredients

  • 1 1/4 cups rice flour
  • 2 eggs
  • 1 1/2 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 Lemon (Zest + juice)
  • 2 apples

Steps

  • First, cut the apples into very thin slices and mix with the lemon juice.

    In a bowl, work the sugar and the grated lemon zest; the more you work these ingredients, the more intense the aroma will be.

    Also add the eggs, milk, and oil to the bowl, mixing well.

    Incorporate the flour and the baking powder, add the thinly sliced apples with the lemon juice, and mix well until all ingredients are combined.

    Pour the mixture into a 9-inch diameter buttered and floured pan or lined with parchment paper.

    Bake in a preheated static oven at 356°F for 30 minutes. After this time, check with a toothpick: if it comes out dry, the cake is ready; otherwise, extend the baking time.
