Ingredients for Apple Muffins

  • 1 3/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup extra virgin olive oil (Or seed oil)
  • 1/2 cup milk (At room temperature)
  • 1 tbsp baking powder
  • salt (A pinch)
  • 2 eggs (At room temperature)
  • 3 apples
  • 3 tbsp granulated sugar
  • 1 lemon (The juice)

Steps for Apple Muffins

  • First, peel the apples and cut them into small pieces, place them in a bowl with the 3 tablespoons of sugar and the lemon juice. Mix well and set aside.
    Now, let’s focus on the muffin batter. In a bowl, using a hand whisk, lightly beat the eggs with the pinch of salt. Add the oil in a stream and the milk.
    Start adding the flour little by little, the (remaining) sugar, and the baking powder, mix with the whisk as long as possible. Then use a spatula to complete the batter and mix all the dry ingredients well without overworking.
    At this point, add the prepared apple pieces, pouring into the bowl also the liquid that has formed. Gently fold with the spatula, just enough to distribute the apples evenly in the batter.

  • Prepare a muffin tray with muffin liners. Using a spoon, spoon the batter into the liners, filling them about two-thirds full.

    For an extra touch, I added some chocolate chips on top of some muffins.
    Preheat the oven to 350°F (static). Bake for about 20-25 minutes. Baking is optimal when the muffins are golden and the toothpick test comes out dry.
    Remove from oven and cool completely before serving (maybe with a sprinkle of powdered sugar).

The muffins keep for 2-3 days under a glass dome or in an airtight container at room temperature, maintaining their softness.
