Ingredients for Arugula Pesto

This recipe will allow you to get about 200 g of fresh and fragrant arugula pesto, the ideal quantity to generously dress 400 g of pasta.

  • 2 cups arugula
  • 1/4 cup pine nuts
  • 1/3 cup grated cheese (I used Parmesan)
  • 1/3 cup extra virgin olive oil
  • 1 clove garlic
  • to taste salt

Steps

  • Wash and dry the arugula well.
    In the blender, put the arugula, pine nuts, Parmesan (or Grana), garlic (if using), salt, and pepper.
    Blend, adding extra virgin olive oil in a thin stream until the desired consistency is reached.
    Taste and adjust salt if necessary.
