Ingredients for Arugula Pesto
This recipe will yield about 7 oz of fresh and fragrant arugula pesto, the ideal amount to generously dress 14 oz of pasta.
- 2 cups arugula
- 1/4 cup pine nuts
- 1/3 cup grated cheese (I used Parmesan)
- 1/3 cup extra virgin olive oil
- 1 clove garlic
- to taste salt

Steps
Wash and dry the arugula thoroughly.
In the blender, place the arugula, pine nuts, Parmesan (or Grana), garlic (if using), salt, and pepper.
Blend, slowly adding extra virgin olive oil until reaching the desired consistency.
Taste and adjust the salt if necessary.
