I don’t know about you, but I love pumpkin in every way. It’s such a versatile and colorful ingredient that it instantly brings cheer to the table. Today I’m offering a very quick and flavorful recipe, perfect for those who have little time but don’t want to give up a healthy and tasty dish. Roasted pumpkin is a very simple side dish to make, but so, so flavorful. You’ll see that the whole family will like it, even the little ones.
Just clean the pumpkin, cut it into small pieces, add oil, salt, and breadcrumbs. Give it a good stir and off to the oven for 30 minutes.

Ingredients for Savory Roasted Pumpkin

  • 3.3 lbs Pumpkin (I used Neapolitan pumpkin)
  • to taste salt
  • 4 cloves garlic
  • to taste Oil
  • to taste Breadcrumbs

Steps for Savory Roasted Pumpkin

  • First, remove the skin from the pumpkin and cut it into medium-sized chunks. Transfer to a large bowl and add a drizzle of oil, some dried oregano, salt, and breadcrumbs (I also added a bit of turmeric), mix well.

    Transfer to a baking tray lined with parchment paper, distribute the pumpkin pieces well, and add the pieces of garlic. Bake in a preheated static oven at 392°F and let cook for about 30 minutes or until the pumpkin is tender, in the last 5 minutes turn on the grill for a crispier effect.
