Banana Cookies…Wholesome, Quick, with the Taste of Pancakes!
I’m always on the lookout for new wholesome cookie recipes perfect for breakfast, and these banana treats are just the answer I was looking for! They are ideal to start the day with energy or for a light snack in the afternoon.
The wonderful thing is that Banana Cookies are very simple to prepare, requiring very few ingredients and even less time! When you taste them, you’ll immediately notice one thing: they greatly resemble the soft and enveloping taste of pancakes.
I’ll share a secret to make them healthier: I didn’t add sugar to the batter because I used very ripe bananas, which are naturally sweeter. However, if you prefer a more intense flavor, you are free to add 20 g of sugar to the batter. It’s up to you!

Ingredients for Banana Cookies

As I mentioned in the introduction, I didn’t use sugar in the batter because I used ripe bananas. You can add 20 g of sugar if you prefer.

  • 2 bananas (about 260 grams with peel)
  • 2 eggs
  • 2 cups flour (I used type 1 flour)
  • 1 1/2 tsp baking powder
  • 3 tbsps tbsp vegetable oil

Steps for Banana Cookies

  • Inside a bowl, work the eggs with the mashed bananas, I used a fork.

    Add the oil and then the flour with the baking powder.

    Mix all the ingredients well.

    With the help of two spoons, make small mounds, well spaced apart, on a baking sheet lined with parchment paper.

  • Bake at 350°F in a preheated static oven for 15 minutes.

Storage and tips.

Banana cookies can be stored under a food dome or in airtight containers.

You can add lemon or orange zest to the batter or use a sachet of vanillin or a tablespoon of vanilla extract.

To make them more indulgent, you can add dark chocolate chips or shards.
