Beans in Tomato Sauce

The beans in tomato sauce are a very convenient and tasty dish. I often find myself in a hurry, so for this recipe, I used pre-cooked beans: in half an hour you’ll have a complete and very nutritious dish. It is the ideal solution for a last-minute dinner that warms the heart, especially if accompanied by a few slices of toasted bread to soak up every bit of sauce!

Ingredients for the beans in tomato sauce

You can use both pre-cooked and dried beans. I often find myself in a hurry, so I used pre-cooked beans.

  • 1 cup white beans (cannellini)
  • 1 1/4 cups tomato puree
  • to taste salt
  • to taste pepper

Steps for the beans in tomato sauce

  • In a pan, pour some extra virgin olive oil and sauté the garlic clove. Meanwhile, rinse the pre-cooked beans under running water, drain them well, and add them to the pan.
    After a few minutes, also add the tomato puree, add the salt, and mix well to let all the flavors combine. Cook with the lid on for about 20 minutes on low heat.

    After 20 minutes, remove the lid, stir again, and cook for another 5 minutes to reduce the sauce and make it perfect.

Storage

The beans in tomato sauce can be perfectly stored in the fridge for 2-3 days in an airtight container. If the sauce thickens too much, just heat them adding a little water. This recipe is also great enjoyed lukewarm the next day!
