Bechamel without Butter: Quick and Light.

The bechamel without butter is super easy to make, with a few ingredients and a few minutes of time, for a result that is still excellent and super creamy.
The beauty of this version is that, being without butter, it is much more delicate, lighter, and so tasty. I enriched it with the addition of grated Parmesan cheese directly at the end of cooking to enhance the flavor, but if you prefer, you can omit it: it will be delicious anyway!

Ingredients for Bechamel without Butter

I used rice flour, but you can use your preferred flour

  • 4 1/4 cups partially skimmed milk
  • 3/4 cup rice flour
  • 1/3 cup Parmesan cheese
  • to taste salt
  • to taste nutmeg

Steps for Bechamel without Butter

  • In a tall pot, pour the milk and put it on the stove to heat.
    Once hot (almost boiling), pour the sifted flour slowly and mix immediately with a hand whisk.

    At this point, add the salt and nutmeg, it will thicken quickly.

    Remove from heat the pot with the bechamel as soon as it’s ready.
    Decide if you want to further flavor it with Parmesan cheese. Just add it and mix well with a hand whisk.

    The Bechamel is ready to be used.

Tips

If you don’t consume it immediately, cover it with cling film in contact to prevent a crust from forming on top, and store it in the fridge.

These doses are for Classic or Vegetarian Lasagna: One liter is the ideal amount for 5-6 layers of lasagna in a medium-sized baking dish.
