Biscuit Roll, a Soft and Elastic Base. The Biscuit Roll (also known as biscuit in pastry) is a magical dough. Imagine a Sponge Cake, but thinner, softer, and especially elastic.
A preparation I often use for my cakes.
It is the ideal base for all desserts that need to be rolled without breaking or for
Delicious Rolls (like the classic roll with Nutella or jam).
Yule Logs (like the Christmas Log).
Modern cakes and layered desserts as a soft base.
Preparing it is surprisingly easy and the cooking time is very quick. Just beat the eggs well with the sugar and gently incorporate the flour.
In a few minutes, you’ll have a perfect, versatile base ready to be filled with your favorite creams: whipped cream, custard, chocolate, or jam.

Ingredients for the Biscuit Roll
- 2/3 cup all-purpose flour
- 3 tbsp Sugar
- 4 eggs
- 3 tbsp vegetable oil
- 3 1/2 tbsp water
- 1 1/4 tsp baking powder
- 1 vanilla flavoring (One vial)
Steps for the Biscuit Roll
Separate the egg whites from the yolks.
Whip the egg whites to stiff peaks with sugar and set aside.
Begin to beat the yolks and then also add the vegetable oil, water, and flour.
At this point, combine the two mixtures with a spatula, adding the egg whites a little at a time and working them from bottom to top.
Pour the batter into a baking tray lined with parchment paper, I used the oven tray.
Bake the roll at 355°F in a preheated static oven for 13-15 minutes.
During baking, it will puff up slightly and then once removed from the oven, it will settle down, which is normal.
Once baked, let the biscuit roll cool completely, then invert it onto a tea towel and gently remove the parchment paper used for baking.
