Ingredients for the Bread Cookies

  • 2 3/4 cups all-purpose flour (I use spelt)
  • 2 eggs
  • 6 tbsp granulated sugar
  • 1/4 cup milk
  • 2 3/4 tbsp extra virgin olive oil (or vegetable oil)
  • 2 1/2 tsp baking powder
  • 1 packet vanillin

Steps for the Bread Cookies

  • In a bowl, pour the two eggs and the 6 tablespoons of sugar and mix them with a fork, gradually adding 2 3/4 tablespoons of oil and 1/4 cup of milk. Add the 2 3/4 cups of previously sifted flour together with 2 1/2 teaspoons of baking powder and the packet of vanillin in stages. Work the dough with the fork as long as possible and then use your hands.

  • Transfer the dough onto a floured work surface, knead until a dough ball is formed. Start forming balls or other shapes and place them on a baking sheet lined with parchment paper.

  • Roll in some granulated sugar. Bake in a preheated static oven at 356°F for 20-25 minutes.
