Brioche Swirls
I have a real passion for brioche: I’ve experimented with many doughs over the years, and this is my favorite.
Today I’m sharing with you these delicious brioche swirls. I’ve enriched the dough with some chocolate flakes, a real treat. Their softness will win you over. Come with me, let’s start baking!

Ingredients for Brioche Swirls

  • 2 3/4 cups all-purpose flour (+ extra flour for the work surface)
  • 1/4 cup granulated sugar
  • 1 tbsp honey
  • 1 1/2 tbsp butter
  • 1 oz fresh yeast (or 1 tsp dry yeast)
  • 2/3 cup milk (Warm)
  • 1 tsp salt
  • 1 egg (Flakes)
  • 1/3 cup dark chocolate (Flakes)

If you prefer, you can use the stand mixer.

Steps

  • Dissolve the yeast in warm milk (make sure it’s not hot).
    Pour the flour into the bowl with the sugar, mix and add the milk with dissolved yeast gradually.
    Add the egg and the honey.
    Once these ingredients are incorporated, add the small pieces of butter.
    Also add the salt and, lastly, the chopped chocolate.
    The dough should be smooth and slightly sticky. (If necessary, feel free to add a bit more flour).

  • Place the dough in a bowl, cover with plastic wrap, and let it rise for a minimum of three hours.
    After this time, take the dough and put it on a slightly floured work surface.
    Roll out the dough with your hands to create a rectangle.
    Create 7 strips and roll each strip onto itself to form a swirl.

    Make all the swirls, place them on a baking sheet lined with parchment paper, cover, and let them rise for another hour.
    After the rising time, bake at 350 °F in a preheated static oven for 15 minutes.

Storage

The brioche swirls remain soft for 3-4 days. I recommend storing them at room temperature inside a well-sealed food bag or under a glass dome to maintain their softness.
