Small shortbread cookies in the shape of a flower with a hole in the center, my favorite cookies since I was a child.
The Canestrelli are made with very simple ingredients (flour, butter, powdered sugar, eggs), their peculiarity is the use of hard-boiled yolk in the dough.

Ingredients
- 3/4 cup All-purpose flour
- 3/4 cup Potato starch
- 1/2 cup Powdered sugar
- 1/2 cup butter (Soft)
- 1 tbsp Lemon juice
- 1 packet Vanillin
- 2 egg yolks (Hard-boiled)
- 1 pinch salt
Steps
In a bowl, pour the powdered sugar and flour, add the sifted hard-boiled egg yolks using a sieve (simply press the yolk against the bottom), also add salt and butter, and knead until a dough ball is formed.
Once ready, wrap it in plastic wrap and refrigerate for at least an hour.
After the resting time, quickly knead the dough ball for a few minutes and roll it out with the help of a rolling pin on a lightly floured surface.
Once you have a medium-thickness layer (neither too thin nor too thick), cut out the cookies with a small-sized cutter.
Arrange the cookies on a baking sheet and pierce each cookie in the middle.
Bake the cookies in a preheated oven at 350°F for 12-13 minutes.
Let the canestrelli cool completely and then dust with powdered sugar. I hope you enjoyed this recipe, see you next time.
