Cheese and Olive Twists

Ingredients for Cheese and Olive Twists

  • 1 2/3 cups all-purpose flour
  • 2 1/2 cups semolina flour
  • 1 cup water
  • 1 3/4 tsp active dry yeast (or 5 tsp fresh yeast)
  • 2 tbsps extra virgin olive oil
  • 1 tsp salt
  • 1 3/4 oz Grana Padano Cheese (Diced)
  • 1 3/4 oz pitted olives

Steps for Cheese and Olive Twists

  • You can knead all the ingredients either in the stand mixer or in a large bowl. In the latter, mix the two flours and the dry yeast, and start adding the water gradually, working the dough as you add the liquid.
    Once the water is added, incorporate the extra virgin olive oil and finally, the salt. Knead the dough for a few minutes until all ingredients are well combined (it should be smooth and elastic).
    At this point, add the chopped olives and cheese cubes (such as provolone or semi-aged cheese). Incorporate these last two ingredients well into the dough.

    Once ready, place the dough ball inside a well-oiled bowl and cover with plastic wrap. Let the dough rise in a warm place for at least three hours or until it has doubled in volume.
    After the rising time, stretch the dough with your hands into a rectangle about a quarter-inch thick. Using a knife or a pizza cutter, create strips approximately 1/2 to 1 inch wide.
    At this point, you can decide to leave them as they are for rustic breadsticks, or twist the ends of the strip in opposite directions to create the characteristic twists.

  • Place the twists or breadsticks on a baking sheet lined with parchment paper. Cover with plastic wrap (or a damp cloth) and let them rise in a warm place for another hour.
    Bake the twists in a static oven, preheated to 390°F, for about 15 minutes.
    In the last two minutes of baking, turn on the grill to create a nice golden and crispy crust on the surface.

Storage

Storage at Room Temperature: Once completely cooled, the twists can be stored at room temperature, in a paper bag for bread or in an airtight container, for about 2 days.

Freezing: For longer storage, you can freeze them once baked and cooled. Place them in a freezer bag. When you want to enjoy them, you can reheat them directly in the oven or toaster to restore their crispiness.
