Very easy and delicious. The cheesy potato meatloaf is a pleasure both in preparing and eating it; it’s also very convenient because it can be prepared well in advance and cooked just in time.

Ingredients
If you’ve never tried it, I recommend trying gluten-free breadcrumbs or turmeric breadcrumbs (you can find them at the supermarket) as they provide a greater crunch to the coatings.
- 21 oz potatoes
- 1.8 oz Grated Cheese
- 1.8 oz breadcrumbs (+ extra for coating)
- 1.8 oz mozzarella for pizza
- to taste parsley
- to taste salt
- 1 egg
Steps
After boiling and peeling the potatoes, put them in a bowl, mash them with a potato masher or a fork.
Add the grated cheese, the parsley, a pinch of salt, the egg, the breadcrumbs and mix well. At this point, also add the pieces of mozzarella.Sprinkle some breadcrumbs on a sheet of baking paper and pour the obtained mixture, form the meatloaf and cover it with breadcrumbs.
Bake at 356°F (static oven, preheated for 35 minutes) in the center of the oven.
Once cooked, let it cool slightly and then enjoy the cheesy meatloaf with immense satisfaction.
