Ingredients for Chicken and Beans in Sauce

  • 1.1 lbs chicken breast (To be cut into cubes)
  • rice flour (You can use any flour you prefer; it will be used to flour the chicken)
  • 1.25 cups tomato pulp
  • 7 oz canned borlotti beans (Or dried ones after soaking and cooking them)

Steps for Chicken and Beans in Sauce

  • First, cut the chicken into cubes or strips and coat it in flour.
    In a pan, heat a drizzle of extra virgin olive oil with two cloves of garlic. Sauté the floured chicken for a few minutes until it begins to brown.

    Add the beans (which you have drained and rinsed) and the tomato puree. Season with salt and add the spices you prefer, for example, I added a bit of chili pepper for an extra kick!
    Cover with a lid and cook for about 20 minutes on very low heat. This is the secret to letting the flavors absorb well!
    Serve the dish very hot. You’ll see, this delicious main course will be a hit, especially with lots of bread to mop up the sauce!
