- Cuisine: Italian
Ingredients
- 4 cups all-purpose flour
- 1 teaspoon active dry yeast (about 4 g)
- 1.5 cups water
- 1 teaspoon sugar (about 6 g)
- 2 teaspoons salt (about 10 g)
Steps
In a bowl, pour the flour with the yeast and sugar, and mix.
Start adding the water and once it is absorbed, add the salt as well. Work the dough well inside the bowl or on a well-floured surface. The dough will be sticky and doesn’t need to be worked much.
Let the dough rise in a bowl covered with plastic wrap in the oven with the light on for about three hours.
After this time, turn it over onto a generously floured surface and make folds from the outside towards the inside on all four sides. Form a loaf and divide it into two parts.
As you can see from the photos, you can make two loaves or one loaf and a ring or even shape it into a heart by simply creating a hole in the center and then shaping it.
Flour the surface of the loaves well and let them rise for another hour.
After the second rising time, make vertical cuts on the loaves with the help of a knife.
Bake at 482°F in a preheated static oven on the lower rack and cook for 15 minutes, then lower the temperature to 392°F and bake for 10 more minutes on the middle rack.
The ciabatta bread is ready.
