There’s something magical about the scent of cinnamon filling the kitchen. Today I bring you a very simple yet impressive recipe: Cinnamon Shortcrust Pastry.
It’s a variation of the classic shortcrust, enriched with the spice that immediately evokes the holiday atmosphere, warmth, and coziness. This pastry is crumbly and fragrant, ideal for making cookies, tarts, or tartlets.
Just a pinch of cinnamon can transform a simple dough into a truly rustic and enveloping delight.

Ingredients for the Cinnamon Shortcrust
- 2 cups all-purpose flour
- 1/2 cup butter
- 1/2 cup brown sugar (or granulated)
- 1 egg
- 2 tablespoons cinnamon (use generously)
Steps for the Cinnamon Shortcrust
In a bowl, mix the butter with the sugar until it becomes a cream. Add the egg, flour, and cinnamon, and blend until you form a homogeneous dough. Keep going! It might seem like it’s not coming together at first, but with persistence, it will.
Once ready, wrap it in plastic wrap and keep it in the fridge for at least one hour. You can also prepare it the night before for excellent results.
After resting in the fridge, the shortcrust is ready to be rolled out on a floured surface.
Baking times at 350°F (preheated static oven):
For a tart filled with jam or creams: 35-40 minutes.
For thinly rolled cookies: 10 minutes will suffice.
