Today my nephew asked me “auntie, let’s make cookies like Pan di Stelle”. I quickly agreed. I didn’t want to use butter in the dough, so I used an oil-based cocoa shortcrust, making light and very tasty treats that strongly resemble the flavor of the famous cookies.
We loved them a lot, and my nephew was very enthusiastic, auntie’s love. Come with me, let’s start baking.

Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 2 eggs
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil
- 1 1/2 tsp baking powder
Steps
In a bowl, mix the eggs with the sugar, then add the oil and mix well.
Add the previously sifted flour, cocoa, and baking powder, and work all the ingredients until you form a soft and non-sticky dough. If necessary, add a bit more flour.
Take small pieces of dough and create balls. Flatten with the palm of your hand or the bottom of a glass and place them on a baking tray lined with parchment paper.
Decorate with sprinkles or chocolate chips, and bake at 350°F in a preheated static oven for 13-15 minutes, no more.
