Cocoa Tart with Custard Cream

The cocoa shortcrust pastry is the delicious version of the classic shortcrust pastry without butter. With this dough, I made a tart filled with custard cream made in the microwave, easy and super quick, but you can easily use the traditional method. The cocoa tart is very delicious and very crumbly thanks to the teaspoon of baking powder added to the dough.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 2 eggs
  • 1 tbsp baking powder
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 cup milk
  • 1/3 cup granulated sugar
  • 3 tbsps cornstarch
  • 1 egg

I used a mold with a diameter of 9 inches

Steps

  • microwave method: mix the egg with the sugar, add cornstarch, then milk, cook at 800 watts for 4 minutes, after this time take the bowl and stir vigorously, put the bowl back in the microwave at 800 watts for 3 minutes. The custard is ready, cover with cling film on contact and let it cool at room temperature.

    traditional method: in a bowl, mix the egg and sugar, add the cornstarch. Meanwhile, bring the milk almost to a boil and start pouring it into the bowl with the other ingredients. Pour the whole mixture into the saucepan and cook until it thickens.

  • With a fork, work the eggs with the sugar, add the oil and mix. Add the cocoa and baking powder, start adding the flour gradually. The dough should be soft, not sticky, and compact; if necessary, add more flour. Roll out the dough between two sheets of parchment paper.

  • Place the rolled dough in a mold lined with parchment paper or greased and floured. Place the now cold cream inside and level it. For the top, I decided to create shapes, but if you prefer, make the classic strips with the leftover dough or make cookies. Bake the tart at 350°F in a preheated static oven for 30 minutes.

  • Let the tart cool completely in the mold.
