Ingredients
- 1 egg
- 1/3 cup all-purpose flour
- 1 cup coconut flour
- 1/4 cup coconut sugar (or granulated sugar)
- 2.5 tbsp vegetable oil
- 1 tsp baking powder
- 1 tsp vanilla (or vanillin)

Steps
In a bowl, mix the sugar with the oil, add the egg and vanilla, and mix well.
Add the all-purpose flour, the coconut flour, and finally the baking powder. Mix with a fork until possible, then knead with your hands.
Create small balls, place them on a baking tray lined with parchment paper, and press each ball with the help of a small glass.
Bake in a preheated static oven at 350°F in the middle of the oven for 10 minutes.
The coconut cookies are ready to be enjoyed.
