Ingredients for the Coffee and Ricotta Cake
I used type 1 flour, but you can choose the flour you prefer. Just remember that each flour has a different absorption. The important thing is that the final batter is very thick, as described in the steps.
- 2 1/2 cups flour
- 1/2 cup sugar (I used raw cane sugar)
- 1/3 cup coffee (or decaffeinated)
- 1/4 cup vegetable oil
- 3 eggs
- 1/2 cup ricotta
- 1/2 cup dark chocolate chips
- 1 tbsp baking powder

Steps for the Coffee and Ricotta Cake
Using a hand whisk, beat the eggs and sugar. Then add the oil and warm coffee (not hot). Add the ricotta and mix well. Next, add the flour and baking powder sifted together. Mix well. The batter will be very thick, it is normal. Add the dark chocolate chips and mix.
Pour the batter into a greased and floured pan with a diameter of 10-11 inches. If you prefer, you can also use a smaller pan, just be mindful of the baking time. Bake at 350°F for 30 minutes. Remember, always do the toothpick test! Once ready, let it cool completely in the pan.

Storage
The Coffee and Ricotta Cake keeps perfectly at room temperature, under a cake dome or well-closed in an airtight container, for 3-4 days. If it’s very hot, you can store it in the refrigerator, but remember to take it out at least half an hour before serving to enjoy its softness!
