The coffee cookies are delightful treats that are very simple to prepare. They are excellent, crispy on the outside, and their aroma is amazing. If you are a coffee lover, you must try them. I used instant coffee for a more intense flavor, but you can easily replace it with a cup of coffee, and I’ll explain how later. Coffee cookies are great any time of the day, but in the morning, they are out of this world. Join me as we start baking.

Ingredients
As mentioned in the introduction, I used instant coffee to make these coffee cookies because I wanted a strong flavor. If preferred, you can replace it with a cup of coffee.
- 2 eggs
- 2.8 oz granulated sugar
- 2 3/4 cups all-purpose flour
- 6.3 tbsp vegetable oil
- 0.35 oz instant coffee (Or a cup of coffee)
- 2 tbsp warm water (To dissolve the coffee)
- 0.28 oz baking powder
Steps
In a bowl, beat the eggs with the sugar, then add the oil and the instant coffee previously dissolved with the two teaspoons of warm water.
Start adding the previously sifted flour and baking powder a little at a time.
Work the dough until it forms a homogenous ball. Wrap the dough in plastic wrap and place it in the fridge for 30 minutes; this step will make the dough easier to work with.
Roll out the dough between two sheets of parchment paper to avoid adding more flour.
Decide on the thickness; if you roll out the dough thinly, you will have crispier cookies, and if you roll it out thicker, you will have softer, crumbly cookies.
Create the shapes you prefer and place the cookies on a baking tray lined with parchment paper. Bake in a preheated static oven at 350 degrees Fahrenheit for 10 minutes.
The coffee cookies are now ready to be enjoyed.
