Ingredients for Coffee Muffins
- 2 1/2 cups all-purpose flour
- 7 tbsp vegetable oil
- 1/2 cup granulated sugar
- 1 egg
- 1/3 cup coffee
- 3 1/2 tbsp water
- 1 tbsp baking powder

Steps
Preheat the static oven to 350 degrees Fahrenheit.
In a bowl, beat the egg with the sugar.
Add the oil, water, and coffee.
In a separate bowl, sift the flour with the baking powder.
Combine the dry ingredients with the wet ingredients and mix quickly, just until the batter is very creamy and lump-free.
Butter and flour the muffin tins (or use paper liners). Fill each liner up to 3/4 inch from the edge.
Bake at 350 for about 20 minutes. After 15 minutes, do the toothpick test: if it comes out dry, the batter is ready.
Remove from the oven and let cool.
The coffee muffins are ready to be enjoyed.
