The Coffee Shortcrust Pastry is a delicious basic recipe, fragrant and crumbly just right, ideal for cookies and pies.
It is a different shortcrust from the usual, with an intense aroma and coffee flavor that will win everyone over at the first taste. To further perfume the dough, we can add vanilla flavor or a packet of vanilla sugar.

Ingredients For the Coffee Shortcrust
I used instant coffee for a stronger aroma, but you can easily use moka or espresso coffee.
- 2 3/4 cups all-purpose flour
- 1/3 cup vegetable oil
- 2 eggs
- 3/8 cup granulated sugar
- 1 1/2 tsp baking powder
- 2 tablespoons instant coffee (or a small cup of brewed coffee)
- 3 tablespoons water (Warm, for the instant coffee)
Steps For Coffee Shortcrust Pastry
In a bowl, work the eggs with the sugar.
Add the oil and the instant coffee previously dissolved with the 3 tablespoons of warm water. Mix well.
Start adding the flour sifted and the baking powder, little by little.
Work the dough until it forms a homogeneous ball.
Wrap the obtained dough in cling film and put it in the fridge for 30 minutes. This step will help work the dough better.The coffee shortcrust pastry is ready to be rolled out! Decide whether to make small cookies or a tart of 9.5-10 inches in diameter.
Bake in a preheated static oven at 350°F.
Tart (without filling): Bake for about 25 minutes. (The baking time with filling will depend on the type of filling).
Cookies: Bake for 13-15 minutes approximately. The exact time depends on the thickness.Your Coffee Shortcrust Pastry is a versatile base that can enhance any filling or become a surprising cookie.
